REBECCA'S MARITIME BROWNIES

I met Rebecca when we lived in Fredericton , New Brunswick...she is a singer, we did a CD together at one point. We played for a lot of gigs, had dinner with her family, laughed and ate strawberries with sugar, and a seven layer salad that was the best. Rebecca gave me this great recipe  for brownies. They are wonderful. I've tried a lot of different concoctions. This one is the best. I think friendship is a lot like that..........the best.

REBECCA’S MARITIME BROWNIES (2011)

(Got this amazing recipe from my friend, Rebecca, who lives in New Brunswick. The brownie cake is dense and moist, great flavour, with a topping that is not too sweet and compliments the cake perfectly)

 First Mixture:
1 cup margarine
1/3 cup cocoa
1 cup water
Put this in microwaveable bowl and melt.

 Second Mixture:
2 cups flour
2 cups sugar ( do not skimp)
1 tsp baking soda
2 eggs
½ cup milk
1 ½ tsp vanilla ( or brandy)
Mix these ingredients all together, incorporate with margarine/cocoa/water ingredients.

Spread in greased 9 x 13” pan. Bake at 375 degrees for about 16 minutes. Add time until a sharp knife inserted in middle comes out clean. Do not overbake. Top the the following.................

TOPPING:
¼ cup margarine, ½ tsp vanilla, 3 tablsp cocoa, 1 tablsp milk.
Boil this in microwave till bubbly. Then Add 2 ¼ cups icing sugar. Beat well. Pour immediately over top of brownies, as soon as you take pan out of oven. This is an amazing frosting…..Cut brownies  and serve as is, and watch people drool……can also serve with ice cream. Freezes well.

Chocolate/Butterscotch/Cranberries

It's the end of the school year. I always make up goodie trays, this year with a pile of fruit in the centre of each tray ( gotta at least pretend it's  alittle healthy), and then deliver them to the Learning Assistance classes at the high school. This yea I did up a batch of Butterscotch Confetti. So easy. So good. It's in the Copany Coming Cookbook. Used butterscotch chips, a dollop of peanut butter, hlf cup of margarine. Melt it all together. Stir. Then add a coucple of packets of colourful mini marshmallows. Freezes great. Doesn't last that long.
Also from the Company's Coming cookbook is this Double Brownie recipe. A dark chocolate browning bottom with a blonde butterscotch top.  Didn't frost it . Would be too gooey.
Lastly, did up a batch of Oatmeal Choc Chip  cookies...from the Taste of Home collection. Has a ton of ingredients from quick oats to regular oats, cranberries, rasins, chocolate, cococut....... nice.
Just have to do up trays tomorrow and whisk it all off on Monday. Then freeze the rest for company coming in July. All set. Bring on summer.

Things to do with Wibbly Brownies

Couldn't resist posting this. Hopefully you've read the recipe for Wibbly Brownies. I think you will be able to appreciate it more this way................. ( Yum, yum,yum........good for giving away to a lot of lucky friends.)

Deliciously Wibbly Brownies

We've all made brownieson autopilot. This is a great recipe from Nigella Lawson's newest collection. It uses cocoa powder, and is studded with lucious nibs of chocolate, above and below. It quells that longing for a dark chocolate fix, in the middle of a dreary, or not so dreary day.

INGREDIENTS: 1 1/2 cups butter,  1/2 cups brown sugar, 2/3 cup cocoa, 1 1/3 cup flour, 1 tsp soda, pinch of salt, 4 eggs, 1 tsp vanilla, couple of handfuls of dark chocolate nibs, or semi sweet chocolate chips. And lastly, a handful of semi sweet chocolate chips to scatter over top.
Melt butter in microwave, toss in brown sugar and stir.
Add cocoa to this mixture and stir.....
Add flour, soda, pinch of salt and stir all together. It will appear dry.
Beat eggs with vanilla. Pour all at once into batter mixture. Toss in chocolate nibs.
Spread batter in foil lined pan. Bake at 350 for about 20 minutes.
Sprinkle extra handful of chocolate chips on top. Return to oven for about a minute. They will magically melt.  Let brownies cool. You can eat them gorgeously warm, while they still wibble a bit,  but  you might burn your fingers and that would never do.
