Decided to try some Kamut pasta....an ancient grain and do up a vegetarian dish. I like vegetarian, just not everyone in my house likes vegetarian. O well.........
KAMUT HUMMUS PASTA ( serves 4-6)
Boil up a 12 oz box of Kamut pasta, till al dente. Drain. In same pot make a roux with 1/4 cup butter and 1/3 cup flour, add 3-4 cups milk and stir till thickened. Season with salt and pepper. Add a 1/2 cup or more, of hummus, a dash of veggie broth for seasoning, grated cheese ( as much or as little as you like). Toss in the Kamut, throw in chopped cilantro and serve with cooked veggies and a sprinkling of grated cheese. Adjust seasonings as you wish. Very nice. A little rich, I found, but good.
Interesting idea to add hummus to a white sauce!
