I used to love regular Chili, but couldn't take the seasonings, so I came up with another Chili version, that carries the same ingredients, only lacks the Chili zip. You can always add chili powder if you wish, I just don't , and turn it into a sort of stew. You can also leave out the ground beef and use veggie soy "beef" instead, and more beans. I'm not exactly sure of the measurements for all the ingredients, so everything is approximate. I tend to make a great big stock pot of the stuff, freeze it in small quantities, and serve it up with leftover potatoes, rice noodles, whatever is on hand.
Ground Beef or Ground Veggie beef
Can of tomatoes
Water to top up pot.
2 cartons of veggie broth
Chopped veggies of your choice: Onions, celery,peppers, carrots, beans, peas, beet greens,
Chopped up Rutabaga ( my favourite)
2 - 3 cans small or large, of various beans.
(If you are very adventurous you can use dried beans that have been soaked overnight and then cooked. But I am lazy...takes too long. Just get those cans of Three beans at the store. Yummy.)
Potatoes cut into chunks.
Seasonings ( a toss of each): Oregano, Thyme, pepper, coarse salt to taste, basil, olive oil.
Fresh cilantro or parsley, chopped and added to the mix
There's no real recipe. If you use the ground beef cook it in the oilive oil with the onions and celery and peppers till opaque. Then dump in everything else. Depending on how large a batch you are creating, choose your cooking pot carefully. This can also be transferred to a large crock pot. Cook on simmer for a few hours. Ladle out onto brown rice, or leftover noodles or potatoes, or just plain, with crusty bread. Soooo good. If you want that Chili tang, then add chili powder, a sprinkle, on each bowl. Works well. As this cools, ladle right away into freezer containers. Then keep in freezer till needed. Can be turned into soup by adding more broth and more water and less ingredients.
