Drunken Mole Chili


Drunken Mole ( mo-lay) Chili ( to make this vegetarian, leave out the pork, add more beans, and endame. If you do not want a heated chili, leave out the hot peppers and hot seasonings, add later to individual bowls) Serve over rice, or with crusty bread......


2 package ground pork               ¼ cup brown sugar
A handkful chopped celery           garlic to taste
Onion, chopped                        ¼ tsp cumin or to taste
3 or 4 yams, cubed                   3 tablespoons cocoa powder
Handful green peppers                chopped parsley
Salt and pepper to taste             tablespoon chili powder in pot
1 large can diced tomatoes                     or
Handful fresh tomatoe slices      Sprinkle chili powder in bowls
2-3 cans white beans                ¼ tsp paprika
1 carton veggie broth                a few chopped Jalapeno peppers
2-3 handfuls chopped potatoes
Handful chocolate Chps
1 can beer ( can use non-alcoholic kind)


Cook ground pork, if using, with onions, celery. Then add all other ingredients. Simmer for a couple of hours. The cocoa powder will thicken the sauce and turn it a lovely rich shade. The yams are wonderful, sweet, nice texture.....and so good for you.
