HERBED PAPRIKA POPOVERS

A popover is a light, hollow roll made from an egg batter similar to that of Workshire pudding. They can be served as a sweet, with cream and fruit, or, as with this one, with dinner. Yummy yum yum. The first cookbook to print recipes for popovers was printed in 1850.History recalls a limerick created in honour of the lowly popover: "Let's call yorkshire pudding a fortunate blunder.It's a sort of popover,that turned and popped under."

HERBED PAPRIKA POPOVERS

Position a rack in the centre of a 400 degree oven. Grease 12 cup muffin pan.


1 cup flour
Pinch coarse salt (better flavour, better for you)
1 cup milk
3 large eggs
2 tablespoons melted and cooled butter
½ tablespoon thyme, and oregano and basil
A dusting of paprika ( should fit in the centre of palm)



Mix flour and salt in large bowl.
In another bowl combine eggs, milk and cooled butter.

Make a well in flour mixture and add in wet ingredients.
Beat for about 2 ½ minutes.

Toss in herbs and paprika. Whisk away.


Divide between all the muffin cups. Batter should only be half way.

Lower oven temperature to 375 degrees. Place pan in oven.
Bake about 30 minutes. Do not open door. You may check about 23 minutes through and see how brown the popovers are coming along. If they are quite brown, they are done.
